This means once again no Aluminum head so Im gonna have to refurb the iron head.

I am considering running one of the GM TBI's adapted to the log head but will the two injectors be large enough to support a turbo motor?

I would like to pull a minimum of 225hp, 300hp was my goal.
 
Absolutely, especially if you go with the holley gm TBI look alike, it already has a pressure adjustment on it, 2 inch throttle bores, a choice of standard 60 lb, or 65, 72, or 85 lb injectors rated at 11 psi and if you boost the pressure the 85's can easily exceed 100 lb,s which translates to an easy 300 hp, I'm going to use one on a boosted 350 chevy, I looked at all the modification you can do with the standard TBI and its just as cheap to go with holley TBI, they had leaky injectors years ago, but now run different injectors and have retrofit pods for the earlier TBI's. part # 522-43 85lb, part #522-80 72lb and part #522-54 65lb injector.
 
Also a stock 5.7 liter TBI will support 225 horsepower easily with a slight bump in fuel pressure to about 14 to 15, after 250 HP the stock 55lb injectors in a 5.7 TBI will start lagging, I think its about 450 CFM, the 454 TBI's are getting harder to find in good shape to where the shaft isn't worn out and the cop car 65lb injectors are like hens teeth now for the 5.7 liter TBI.
