Throttle cable with stock carb and 94-04 Stang gas pedal?

For Christmas I got a set of 2001 Mustang Bullitt pedal covers and of course they don't fit on the Fairlane's stock pedal setup. Instead of getting a set similar to the Bullitt covers I've decided for the clutch and brake to cut the Faiirlane pedals off and weld the Mustang pedals onto the Fairlane tower.

The gas pedal is what I haven't decided on yet. On one hand I could do the same to the gas pedal that I'm doing to the clutch and brake. On the other hand, I'm considering removing the Fairlane's stock pedal entirely and using the Mustang pedal along with a cable.

How hard/easy would it be to convert to a throttle cable with the stock carb?
 
I think it woudl be pretty easy as you can run the cable any way you need to. Cobrasix has a write up on how to do this on his website.

What pedal are you wanting to use? One off a 2001 Mustang or instead, one off a early Mustang? The early V8 Mustang gas pedal works well, but I don't know if your pedal covers would work on that pedal.
 
Basically what I'm trying to do is completely ditch the stock setup. The 2001 Mustang pedal would bolt to the firewall, the cable would run from the 01 pedal to the stock 1100 carb.

Is said setup possible?
