Like the title says, What is stall speed? How does it effect driving? Why/how does it come into cam selection? I have read several posts on cam selection and stall is mentioned in most of them when a automatic is the transmission behind the cam in question.

The answer is long and drawn out but here's a little bit for you.

Stall speed is the engine RPM at which the torque converter transfers the power of the engine to the transmission and starts the car moving.

Cam selection comes from several factors.

1: Desired operating rpm
2: Desired Power range (low end -mid range- high rpm)
3: Intake flow and design

All of those help a cam grinder determine the values with to grind into your cam blank. The torque converter stall speed is matched to your style of driving and or racing combined with when you want your wheels to have full power.
