Got the rebuild done, installed the engine and did the initial start up and cam break in. I have a lifter clattering that I'll go back in and adjust. Now that the cam break in is done, do I change the oil filter only, then take it for a couple hundred mile ring seating ride, then a full oil change?

do a full oil change, then again at 500 miles. this should get most of the wear particles out of the system. after that i like to change again at 1000 miles and then observe normal oil change intervals.

In the old days I would usually do a full break in then dump the oil and change filter at about 500 miles. X2 If you want though it sure wouldn't hurt to change the oil & filter right now, its cheap insurance as expensive as engines are to build. Good luck

the other advantage to doing a full oil change right now is that you can see if there are any ominous chunks in the oil.
