160 180 or 190?

Hi everyone I'm asking you today about thermostats. I will be fixing up the car in co but after summer I'm bringing it down on the highway to AZ. What of those thermostats would you recommend for both states. Or will I have to switch them out. I bought a 160 by accident awhile ago. I heard that a lower rate thermostat can cause sludge buildup. I just don't wanna overheat. Thanks
Jarod.

Hi, I would use the 180 thermostat. 160 and the engine may not warm up as you know. The higher temp stats are a more modern thing because hotter engines run cleaner. I drove many 100+ degree days with no trouble. The main thing is to get everything set up and drive it so you know what to expect. Good luck
