Nice Job! If you need any help tunning that carb let me know. I have the same carb. Holley 2300 (if it's not it looks just like it). At any rate I've gone through all the fuel systems in that carb (mixture screws, mains, power valves and discharge nozzels) and had to change them all to get my car to respond correctly to throttle input. At any rate let me know if you need any help when you get to that point.
 
Cool! If you would, please send me the current setup you are using for that carb (is your also the 500CFM model?) and maybe an outline of the interations, trial and error, etc. How bad was it "out of the box"?
 
Yes mine is a 500cfm and out of the box it was terrible. Keep in mind that I'm about 4500ft above sea level.

I'm running 62 main jets, 5.0 power valve (going to try a 5.5 or 6.0) and a .031 discharge nozzle. The carb came with 74 mains, 5.0 power valve and .028 discharge nozzle. Even though I had to go with smaller mains I had to increase the discharge nozzle size. The discharge nozzle squirts gas into the manifold when you first hit the pedal. With the .028 I had a hesitation and went to a .025 (holley recommends changing sizes in increments of three on the nozzles) and the problem got worse and in fact the car stalled so I went to a .031 and bam no more hesitation.

You will need a vacum gauge and it's best to hook it up while your driving hit 1/4 to 1/2 throttle and see what the vacum drops down to. Get a powervalve to match the drop in vacum at 1/4 to 1/2 throttle. That should work fine.

Before you do anything though set your mixture screws using the vacum gauge and then your idle speed and start from there.
