So I can't remember ever mounting a carb, so I thought I'd ask.

Quick backstory - Blew head gasket, swapped to large log head, ditched SCV carb/Dizzy for an RBS/1969 mech advance distributor. Carb is a fresh rebuild from Ace automotive in Santa Clara that specializes in vintage cars. I need to mount the carb to get the new linkage mapped out (moving from carb base bell crank to an intake mounted bell crank).

I have paper/fiber gaskets for the carb and base (I think). Assuming the gaskets aren't creased or damaged, and the mounting surfaces of the intake/spacer/carb are flat, unmarred, and cleaned... I shouldn't need gasket sealant, right? just clean the surfaces with Acetone and bolt things together?

Also, should the surfaces have texture to them, or be polished?

If you grease the gaskets they won't stick and tear and can be reused. I oil carb gaskets especially bowl gasket with trans fluid so I can reuse them.
If you glue a valve cover gasket to the valve cover then grease the other side the gasket can be used multiple times.
