I have a 1966 Mustang with an I6 engine and a 1100 carburetor. If I don't start it every day or so, the gas dries out and gums up the filter and carb. Anything I can do to stop this? I appreciate any help.

Ethanol free gas will solve the problem. You might have an internal leak if all it takes is a couple days. When the bowel is full, look down the throat of the carb and look for raw gas. If none, you could pull the carb off, keep it level, let it sit and see if any gas runs out

I’m in Florida, we use it a lot in marine/air boat sector. I don’t know about Arizona . Wawa has it here, As well as Murphy. There is usually a separate nozzle with a different color label, and not all pumps have it, only a few on the ends of the pump rows. Maybe out there check with agricultural locations ?
Check with members of a car club/ at a show? Marine gas would be an option but here it is more expensive
