Sure it would work, but the bigger you go the more you oversize it. If you can find a .98 or 1.01 or 1.02 casting that would make a nice upgrade to stock carb as 2100 is basically a decent carb. 1.08 and up are way oversized.
Use the compression calculator at http://falconperformance.sundog.net/compcalculator.asp to determine the CFM need of your application and try to find appropriate 2100 casting. For stock you'll need no more than 2100 .98 casting (190cfm). Hard to find? Don't know, but for example here in Finland I have not seen anything smaller than 1.14 (300cfm).
I think as long as you stick with 170cid keep the 1V and plan for a full 200cid setup with a Autolite 2V to be swapped in.
