carb and adaptor recommendations

I have a '66 convert with a '68 200 in-line 6 with only 3500-4000 miles on a complete rebuild. It runs poorly with the current carb (original) and original distributor. I would like to increase the performance and am planning on adding a duraspark II setup, a set of headers (from Clifford) and would like to add a newer (better) carb. I've heard lots about the holley/weber 2300 and 2500. You guys with experience, please give me the pros and cons of these carbs - or recommend another? Which is the better adaptor for ease of adapting? I've heard with stovebolts you have to redesign the accelerator linkage. I've heard with cliffords you only have to tweak the linkage. Again, for you that have experience with these setups, which is the best option? I really don't care much about gas mileage - just would like a good running - good performing car.

I rebuilt the original 2bbl off of a 67 mustang with a 289, Holley 2100 IIRC and used a Clifford adaptor. I needed to grind on the adaptor a little to let the butterfly's open properly but it wasn't a big deal at all. The linkage was diferent so I just fabbed up some brackets, also not difficult. All in all it was pretty easy and it runs great. Matt.
 
Affordable adaptors to put a 2V carb on your log can also be found at Trans Dapt. I bought one from their dealer NAP for about 13 bucks.
