Hot Air Choke to Manual Choke

What needs to be done to switch from a Hot Air Choke to a Manual Choke?
Can I just buy a manual choke cable? If you add a manual choke cable, what do you do about the fast idle? I am planning on driving my car with just the one carb this winter ( I have a 3 carb set up). Any suggestions?

Many auto parts places (I've used the NAPA ones & seen them at AutoZone) sell a little kit that makes it easy to convert. Comes with everthing you need & instructions.
