I know there are a hundred different posts about modding the log head, but i remember seeing that someone was going to try to grind the stock carb adapter off to fab the 2 barrel. Was it actually done and if so what is the best way to make the surface true and flat.

i have a 68 falcon with a 200.

A few have done it, I think that most have the headwork done by a machine shop on a mill that ensures they are working a flat surface. The process is outlined in the Falcon Performance Handbook. I don't know if you can do it with a '68 head as it has the 'round log' on it and the later heads (mid 70's and on) have the 'flat log'. The early heads might not have enough 'meat' on their topsides to allow the modification to happen.

wow all this time for some reason i was not aware that the old heads were lets say less then desirable.

the later heads have bigger ports and hardened seats too.
