Is it okay to put two gaskets on top of each other in between the intake and adapter plate? I don't like how thin the gasket is and wanted to know if i could just use two .

Yep.
I've quit buying those simple gaskets.
Got some holes punches and some heavy paper.
As a matter of fact I just made a spacer with two cardboard gaskets and a piece of that white cutting board material. And some permatex copper.
