Which head to use?

I'm in the process of building up a 200 to put in a 66 Ranchero and can't decide which head to use . I have the original 66 head or I can obtain a 69 flat log head or a 79 and 81 250 head. Which of these heads would be best for a mild performance build-up? Any info would be greatly appreciated.
 
I think the best all around log head would be the late 70's 250 head. They have larger valves and are already set up for unleaded fuel. Remember to cc the new head so you can see how much to take off it because the chambers are larger then your old one. Do a search for "head gasket" on this forum. You need to mill the head down even more because the new gaskets are thicker.

I just read the "Cross-flow head" post and noted that our host has some insites coming on "Significantly increasing flow" in a log head. So you might want to wait for that insight.
