Many people have used headers on stock and modified engines.
Whether or not you feel it, is up to how tuned YOU are to power changes. A lot say they don't, but there will be a slight difference at least. They are often credited to helping fuel mileage. There will definitely be a huge sound difference if you change mufflers too or even if you don't.

If you plan to put them in and don't have much knowledge with exhaust modification it is best to have a shop put any New exhaust pipes in, however the headers themselves are about like putting in a new manifold. But if you plan on only doing the headers you will need to modify the exhaust to use the dual outlets. But I believe most will suggest a new exhaust all the way back to match.

Definitely going with new pipes from the flanges back.

How about the carburetor? Would the 1bbl be sufficient as is, or should I consider rejetting?

You may get differing responses, duals definitely are different and how you believe they differ is noticeable.


 
my collectors are just below my starter, those in the pic are much longer than mine. But like others said, what you get out of it depends on what else you do to your engine. I haven't got anything out of mine as my engine's super de-tuned right now.

getting ready to rebuild another engine with a large log, 32/36 progressive carb, ds2, and a hotter cam. Should have enough breathing to use the headers then.
 
There is definatley a sound difference between the single and duals. Pipe size and muffler choice account for the sound and tone. Here is a link to vid and sound clip of my 64 falcon tri-power with long tube dual outlet header wi th 2" pipes and thrush turbo muffler. Dang!!! That sounds awesome. What all have you done with the engine? Is it still a 1bbl?
 
I had a 1bbl on my duel exhaust setup, the old sound clip is in my sig

now will u notice a difference in power, not unless u do more. If you do more later on, then yeah these will help multipy the performance increase.

Can you feel the difference? oh yeah there is more rumble with headers, the manifold really does a good job keeping the noise and rumble down. :P

Probably would not have to Re-jet, if your car is tuned for optimum performance before adding Headers. Header exhaust is usually considered part of performance package complementing fuel(intake/carb) and ignition(distrib/timing) upgrades but does just sound cool...

yes I did rejet the carb (1bbl 1100v), I got more top end, No becuase I jetted the carb before the headers... I didn't have to re-jet because of the headers.

What all did you do to the engine?
 
when I got the header... I also got:

a 78 Long block
a 78 hex large log 250 head (heavly modified), still mounted the 1100v carb on here before I took it off to modify it for the 2bbl
a new cam shaft

come to think of it, I never had a header on a stock 200ci...
 
The engine details are in my sig at the bottom of this post. I am not sure if just a header would negate a jet change , sometimes freeing up the exhuast tend to slightly lean the mixture but the factory carbs were jetted a little rich.The best method to tell if you are jetted properly is to read the plugs. I also installed an Air Fuel Ratio moniter in one of my header collectors to help with tuning the tri power.
