Getting a 69 coupe with a 250...what do you suggest?

I must inform you that i sold the 65 coupe due to some problems with the paperwork and other stuff. Now i am considering getting a 69 coupe with a 250, has a c4 which needs fixing and 2.79:1 rear gears(actually i just need to get the money and tell the guy we have a deal). We were able to start the engine after 1 and a half hours of trying and it sounded good to me. The car has mach 1 seats, power steering and front disc brakes as far as "extras" go. What mileage could i get from this car with an upgraded exhaust and electronic ignition? What is required to upgrade to electronic ignition?

The engine will be going out for about 3 weeks while the car is painted and re-upholstered. Im thinking i should port the heads and install hardened valve seats while the engine is out. What else do you suggest i do in these three weeks i have. The car is going to be on a trail period for about a month or two to see if i should keep the car or not. When i decide to keep it then i will spend more money on upgrades.
Im making a list of the possible things i will need to spend money on(basic maintenance and safety) maybe you could help me with this list.
New exhaust, brakes(from master cylinder to rear drums), checking the oil pump, fuel pump, and water pump( by the way, how can i check these?), carb, fixing the rusty parts, suspension, steering...what else do you think i should consider and what upgrades should i start thinking about? It's going to be my daily driver so good gas mileage is my primary goal.
 
I might take the engine out of my 69 coupe and do some things. Im interested in ideas and cost too.
 
8) i just bought a 250 for my falcon, and here are a few things i have planned for it;
1: i plan to port the head and install stainless steel valves, no hardend seat as i feel they are not needed.
2: one of azcoupe's cams.
3: one of azcoupe's dual outlet header
4: port divider.
5: rebuild the bottom end using 255 pistons, keep an eye on the compression ratio. i have a later head with larger chambers i can use.
6: either two 2bbl carbs, or efi, not sure which yet.
 
Here is a list of a LOT of upgrades for you to look through,
As far as the head, you need to do the hardened seats (for unleaded gas), 3 angle valve job, 1.75" intake valve, mill and deck to your liking (60 over 40, 40 over 30, 40 over,). The electronix ignition is can be done with the Pertronix breakerless ignition system (replaces your points and condensor) which is $59 and the Pertronix 40,000 volt Flame Thrower ignition coil for somewhere aound $30 (can't really remember) and that will give you a good electronic ignition system (better gas mileage, smoother acceleration, more time between tune ups, NO points ever again, etc). Anyway, here is the list I have put together:

Exhaust:
Headers (dual outlet) (Az coupe makes some I know, I have Clifford)
dual exhaust (2" - 2 1/2")
Performance muffler(s) (flowmasters, etc.)

Ignition:
HP ignition coil (40,000 volt Pertronix Flame thrower or other)
Electronic ignition (pertronix breakerless ignition system)
Distributer (lots of different ones used by all of these guys)

Tranny:
You can someday upgrade to the T5 if so desired (get rid of those 2.77 or
2.79 gears you have)

Engine:
Performance rebuild (if needed) - (Flat top or dished pistons, push rods,
valve springs, rings, etc. etc)
Mill and deck the head
(possibly a performance head - aussie or other - lots of help here on that)
bigger valves (1.75" intake, etc)
3 angle valve job
hardened seats (for unleaded gasoline)

A good 2 bbl carb (Weber 32/36 or Holly 5200)
