I took off my head and had it tack-welded in, and then had the header mating surface machined flat.
Epoxy will last about a month and then break. Trust me, I epoxied mine twice. But then again, I was driving the car daily at the time.
It's your call. But factor in things into your decision like the condition of your lifters and pushrods, etc. While the head is off, it's an ideal time to replace those, as well as get the head milled to raise the compression, if you want.
