what temp thermostat should i use?

what temp thermostat should i use on my US 250 with OZ head? I put a 160 in (I think that's what it is?), the same as my engine had before the head swap but I noticed that the OZ head had a 192 in it. which do you think is a better temp range for my new setup?

8) i prefer to use a 180-195 tstat. i also prefer to try and over cool my engine as well. that way i have enough cooling capacity to help prevent over heating under most conditions, and i also have heat in the winter.
