Does anyone have any good ideas for the best way to attach the "cherry picker" or hoist to my enigne for installing back into my Mustang? I would like toa ssemble as much the engine as possible outside of the engine compartment,,,, any suggestions for how much to assemble? Are there any brackets available for mounting the chain to that attaches to the hoist?

IIRC, there was on old thread on brackets installed in some vehicles for that purpose.
but my personal preference is to find suitable boltholes on opposite corners of the head or block and bolt the chain directly to it. i would strongly advise having some form of leveling device which allows you to adjust which of your 2 lift points is higher. my trick (for not having the proper doohickey) is to have a chain coming down from the hoist to the rear liftpoint, and having a cheap come-along going to the forward liftpoint, allowing me to adjust.

Warning from experience: NEVER use lift points on the bottom side of the block, as there is a severe risk of the whole engine flipping over.

I just pulled a head last week from an '80 Fairmont and there was factory brackets installed to pull the engine. They was one on the front drivers side and one at the rear passenger side. They where attached to the block itself and stuck up about level with the valve cover.

I take a chain from the rearmost exhaust manifold bolt to the front left corner of the block, where there are two tapped holes just forward and above the distributor.

Same here. 3/8 bolts. But rented an engine hoist for a day. Then rented it for one more day to put it back in. Kept the block stand for two weeks. Came to maybe $100.00. Cheap I figure, with nothing laying around afterward.

i just left the head off and used 7/16 bolts to lift it (shown in my sig). putting the head on after its in the engine bay isnt hard, just cut the heads off 2 old head bolts and use them to guide it on.

My '78 motor came with lifting brackets. One is on the side of the block, just in front of the distributor. The other one is part of the plate that the kickdown rod mounts to on the back of the manifold log.

To take the motor out, we took the head off and put 2 head bolts through the chain into the block.
