which one of these is the correct pedal assembly that i would need to mount in my 66 mustang to convert from a c4 to a T5?

None of those pedal assemblies will work. The first looks like an automatic. The 67-68 pedal brackets will not fit (I tried) a 65-66 Mustang.

Even between a 65 and a 66, there is a difference between the brake cylinder rod mounting. The 66 uses a pedal mounted brake light switch and the 65 has a pressure activated switch, so the attachment is slightly different.
