All Small Six 200 I-6, Autolite 2100 throttle linkage

I'm getting toward the end of my mustang rebuild. I just had to put a rebuilt carb on. Its an Autolite 2100 (C825A). The issue I'm going to run into is the throttle linkage. With the original pedal setup, I hit the bottom of the carb with the arm and the direction is all wrong. The pedal arm movement is up and down while the throttle on the carb is side to side.

With what I've been able to find on the internet, it seems like changing to a throttle cable is going to be the best option. Thoughts? If so, what is the best way to go about this?
