Yep, Ive already located a V8 engine cover from a donor boat. I have some cool vintage "marine" speed stuff for that also..
 
Depending on your budget, a built up Ford 200 with one of the new aluminum heads and a 2 barrel or 4 barrel marine carb might just be the ticket. I'd probably keep the cam in the "mild performance" range and focus on letting the thing breathe as well as it can through that marine exhaust manifold.

On a somewhat lower budget a Ford 200 with intake log modifications to allow you to direct mount a marine 2 barrel along with some internal mods to the head to improve breathing, and a mild performance cam would still wake that boat up a good bit.
