What’s the Most inexpensive and and efficient method to upgrade inline 6 to 300-350hp ? What’s parts do I need, and what route should I take? I would like to do piece by piece and still drive the car every now and then while adding parts. Or should I just V8 swap?

If you're trying to avoid the "big bite" of buying a crate engine and all the trimmings for the conversion, I can understand that. However, to get your six into that horsepower range is going to take some hard-to-find expensive parts and machine work. In other words, money and downtime. There's really not a build-a-bear option unless you start with a running V8 and add components. Even then, that engine would most likely need machine work and new internals.

To build a 300-350 HP 200 will take some money, turbo knowledge, run it on premium fuel and love the small six. it is not for everyone.
Keep in mind the you have to change and upgrade the drivetrain at that power level. Oops, I see that you have a post 66 so your drivetrain would probably be ok.
Because you suggested the V8 tells me that the V8 would be best for you.

"it's just horsepower per cubic dollar..." - (my machinist )

"300-350hp" - forced induction could get you close but doubtful about: " ..still drive the car every now and then while adding parts'" A serious staged plan , monopoly level money and excellent assistance can make it worthwhile ...
